Wozzy’s Summer Steaks on the Grill

Choice of Steak is key!!! I love Ribeye, my wife likes New York Strip because it’s leaner. Cheap beef does not make good steak!!

Marinate steaks in 2 tbsp, 1 tsp garlic salt, 1 tsp pepper, 2 tbsp tabasco sauce for ½ hour to a whole day. Rub it all around, get it in there!!

Preheat the grill and scrape off if it is dirty.

The key to a great steak is to cook it over medium heat with the lid just propped open by a metal turner or pair of thongs. Cook steak on each side for 4 minutes. Cut one steak in half to check on how well it is done. 4 minutes per side should produce medium rare meat. If people want it medium rare, cut the steak into a few pieces because it will continue cooking itself after it’s taken off the grill.

Pink in the middle=medium rare

Greyish color in the middle but moist=medium

Totally grey throughout and noticeably less moist=medium well

My favorite light way to serve steak is with a bit of olive oil, lime juice and a little salt.
