Pauly's Crabcakes
 
1LB LUMP CRAB MEAT(Don’t use imitation. Anyone with a palate will hurl)
 
1 ½ TBSP MAYONAISSE
 
2 TBSP MUSTARD
 
2 TSP SOY SAUCE
 
2 TSP HOT SAUCE
 
1 TSP GROUND GINGER
 
1/2 TEASPOON RED OR CAYENNE PEPPER
 
SALT
 
 1 TSP WHITE PEPPER
 
BREAD CRUMBS OR CRUSHED CRACKERS
 
LEMONS
 
Canned crab meat is generally already cooked. You will have to boil fresh crab. Gently sift through crab meat and take out excess shell. Combine wet ingredients, salt, peppers, and ginger. Gently fold in crabmeat. Squeeze in a small lemon wedge. Fold in about ½ cup of the crackers. If you are going to deep fry coat the outside with crackers or bread crumbs. Broil or fry until golden brown on each side. Serve with heaps of lemons and tartar sauce or whatever sauce you like.
