North Carolina Pulled Pork
3 tablespoons salt
2 tablespoons pepper
1 tablespoon sweet paprika
5 pound boneless pork shoulder roast
2 tablespoons vegetable oil
1/3 cup apple cider vinegar
1/3 cup distilled white vinegar
1 1/2 teaspoon sugar
1 teaspoon hot pepper sauce
Pre heat oven to 300. Mix salt, pepper, and paprika and rub all over the pork. Heat oil in pan and brown pork roast. Double wrap pork fat side up with heavy duty aluminum foil. Roast for 4 1/2 hours. Remove from oven increase heat to 450 degrees, unwrap the top pf the roast and cook in oven for 20 minutes. remove and shred and serve. I saved the drippings from the pan and added that on top of the shredded pork.
